Chef Twon — executive chef, recording artist, and author. One table where heritage, flavor, and soul are served together. Founder of Ebony & Ember Culinary Concepts.
"It's not taboo to go back and fetch what you forgot."
Stepping into the kitchen of Ebony and Ember, I'm not just opening a restaurant; I'm bringing a lifelong dream to fruition — a dream seasoned with the flavors of my past and the vibrant spices of the African diaspora. My journey began not in a gleaming, professional kitchen, but in the heart of my grandmothers' homes. Their kitchens were my first classrooms, the clatter of pots and the aroma of simmering stews my earliest lessons. That's where the roots of my culinary passion took hold, where I learned the profound connection between food, family, and tradition.
I went on to pursue classical culinary training, honing my skills with precision and discipline. I mastered French techniques, delved into Italian flavors, and explored the intricate art of patisserie. It was an invaluable experience, building a strong foundation that many chefs aspire to. Yet, even as I perfected a béchamel or crafted a delicate roulade, a pull — a whisper of a different kind of culinary story — persisted.
That whisper grew louder, echoing the saying, "It's not taboo to go back and fetch what you forgot." For me, "what I forgot" wasn't a technique or a recipe, but a deeper connection to my heritage, a more profound exploration of the flavors that truly spoke to my soul. I realized my foundation, my true north, lay in those early days in my grandmothers' kitchens, in the rich tapestry of African and African diaspora foodways.
Ebony and Ember is the culmination of this journey. It's where my classical training meets the soul-stirring ingredients and diverse culinary traditions of the African diaspora. Imagine the sophisticated plating of a fine-dining establishment embracing the bold, comforting flavors of West African stews, or the delicate touch of a French sauce enhancing a Caribbean-inspired dish. This isn't fusion for fusion's sake; it's a mindful celebration, a conversation between culinary worlds.
I'm opening Ebony and Ember because I believe these stories need to be told, these flavors need to be celebrated, and these connections need to be forged. It's a place where you'll find the warmth of home-cooked meals elevated with professional artistry, where every dish tells a story of resilience, creativity, and the rich cultural heritage of the African diaspora. It's a return to my roots, a bringing forward of forgotten flavors, and an invitation for you to experience a culinary journey unlike any other.
